Have you had your green beer yet?!

Well first off Happy St. Patrick’s Day! If you haven’t had that green beer that’s okay there’s plenty of time left!

I usually choose not to wear the specific color to commemorate the holiday, but I looked in my closet and found these springy green pants I have and said what the hell.

This day started off super busy and now it’s tailed off, so i’m quietly jamming to Glee while some are watching bball games…tuh.

So this am I made Baked Oatmeal, I think i’ve made it every morning, I don’t have any pictures but I do have a link to the recipe! Go on over to Chocolate-Covered Katie and bake up her lovely creation!

I’m all about blog recipes lately because last night my dad was kind enough to make Spinach Artichoke Lasagna Bundles….OMG so yum! I had it for lunch today too! I stumbled on this blog called Beth’s Journey and you can find the recipe here!

Now it’s almost 3pm and I have two hours left at work, and then a lovely hour commute but at least it’s Friday tomorrow!

Side note/question: WHY can’t I find “big ass heart” from this week’s Glee episode on itunes?! Any answers that leads me to a download would be amazing!

Nuts About Almond Butter!

Like my title? A little more creative, eh? #imanerd

Today was a good day!

I got to do some work, although data entry it kept me busy and not bored! It was also great to see my boss from my previous job! Love her to bits and pieces!

After work I had to go to Lowes and get keys made…I love Lowes it’s super fun in there. I also bought a huge plastic tub that I think can fit all my shoes…I think…

Then I decided to hit Whole Foods (aka Whole Paycheck Heaven) to pick up whole almonds, steel cut oats and some granola! After Whole Foods I went off to Michael’s craft store to get some mason jars for the Homemade Almond Butter that’d I’d be making!

Finally made it home, popped on the TV and damnit another news clip of Prince William and Kate Middleton *tear* but again I digress…

I decided to make a turkey burger with a sweet potato and some green beans…delicious!

Then I decided to attempt home made almond butter, I found the recipe via The Chic Life from The Edible Perspective (both fabulous blogs might I add!)

My thoughts on homemade almond butter is this…not a lot of ingredients needed but it was a bit time consuming, maybe it’s because my food processor dates back to 1980…I dunno just saying…
Even though it took some time, it tastes FABULOUS!

I’m a bit tired from making the nut butter so it’s time to prop my feet up and read Decision Points (so amazingly good!) while waiting for Parenthood to start! #livingthedream

What’s on your mind?

I legitimately just sat here for about 10 minutes thinking of a title and while watching the Real Housewives of Beverly Hills for the 15th time…(I kid you not)
I looked to my facebook and hello there’s my title!

What’s on my mind today…
jobs, moving, canceling my gym membership, will I ever find a gym as good as this one?!, canceling cable and electric, do I have enough money?, when am I moving down to DC?, I think I need another manicure…
so many thoughts…not enough answers.

I found a job opportunity that says a video is optional with the application…obviously the video will set me apart but what do I do?, what do I say?, should I play music?, should I get people to tell them why I’d be so good for the job? *any suggestions would be lovely…*

After tweeking my resume for like 2 hours I decided to go to the grocery store because I literally had zero food in the cabinets or the fridge.

By the time I got back it was 3:30 and I hadn’t eaten all day, so I had a snack — cottage cheese, snap peas and this yogurt veggie dip from Marzetti. I tired the Chipotle veggie flavor, it was pretty good!

I sat around reading some blogs to find inspiration for dinner tonight but instead I came up with my own idea.

Apple Chicken Sausage with Butternut Squash on top of an Arugula Spinach Mix
and a bit of Balsamic Vinagrette! It was amazing.

I decided to grill the butternut squash and chicken sausage…

Now for those who fear the words chicken and sausage put together don’t worry it’s actually not bad. I get the Al Fresco brand, doesn’t have a lot crap in it like preservatives, nitrates, MSG, etc.

So I grilled the butternut squash and chicken sausage for about 6-8minutes until there were nice grill marks. Oh and I also added a pinch of cinnamon…GREAT MOVE.

After that I took the butternut squash and chicken sausage and laid it on a bed of arugula/spinach mix with a drizzle of Balsamic…ta da!

Doesn’t it look great? It tasted great too!

After I sat for a bit read a few more blogs for inspiration for dessert and stumbled upon Smoothie Girl Eats Too’s Low-Cal Microwave Protein Muffins

I made some variations…I used whole wheat pastry flour, hot cocoa mix and I added choco chips (aka best decision ever).
It came out gooey and I had to nuke it for longer than 2:30, in total I did it for 3:30.

I also decided to add apple butter on top. It tasted fabulous!

I’m going back to work tomorrow to my before the campaign job to do some data entry and stuff until I move which i’m stoked about!

But for now I’ll be watching good ol’ Monday night tube (How I Met Your Mother duuuh) and figure out my application video!

When there’s nothing else to do…BAKE

I woke up around 8 and decided to bake to get my morning started.

I had two honey crisp apples that needed to be used so I decided to make my Dad’s apple crisp!

You need:
Apples (2)
Flour (2tbsp)
Cinnamon (1tsp)
Sugar (2tbsp)
Brown Sugar (1/4c)
Oats (1/2c)
Butter (2tbsp)

My Dad’s recipe calls for 7 apples so I had to scale all the measurements down.

First you take the apples and you skin them. Then you core them and cut into half moon shapes. I decided to go medium with the thickness.

Put all the apples in a mixing bowl with cinnamon, sugar and flour. Mix it all till all the apples are coated.

Instead of using another mixing bowl I decided to put the apples in the pan and use the same bowl…

After the apples are evenly spread out I turned on the oven to preheat at 325*

I took the mixing bowl and added all the ingredients for the toppings. Put the oats, some more cinnamon, brown sugar and butter. I added everything in and made sure to cut up the butter into little squares so i could make the mixture all crumbly.

Once the topping is all done add it on top of the apples.

Usually my dad’s is completely covered with all that crumbly goodness but I decided to go lighter.

Put some aluminum foil on top and stick in the oven for 30 minutos…

30 minutes later…


Yum! All that was missing was some vanilla bean ice cream but since it was about 8:30 I decided against it!

My thoughts…holy crap i’m so out of shape…other than that it was challenging, a good stretch and a good burn, what more could you ask for from good ol’ Jillian.

I did some more job searching took a peak at some jobs over in the UK and I came across some gossip news piece about this realty show (The Only Way is Essex) that’s like The Hills. So of course I googled and saw the episodes on You Tube..to be honest it’s just like any guilty pleasure realty show but BONUS they’ve got accents. I must say the first episode my head was spinning because of the accents and the speed of their chats. Check it out if you can!

(f)unemployment

Day 3 and i’m horrible at this (f)unemployment thing.

Now don’t get me wrong I do enjoy being able to watch Friday Night Lights seasons 1-4 and go to the gym whenever I please but I’m bored I’d rather be working.

The campaign had me up in the early am and I wasn’t in bed till midnight or so. It was exhausting but I was never bored…

This is an adjustment to say the least.

Last night however I did find an awesome recipe — Grilled Heirloom Tomato Pizza.

I went to the store picked up what I needed, no heirloom tomatoes so I made due.

Did you know Pillsbury has a thin pizza crust dough in a can? It’s fabulous but anyways I digress.

You need a grill, I had a grill pan.

You lay out the dough and then put the dough on the grill…
You grill the dough for 3 minutes or so one one side then flip.
Put some garlic, mozzarella cheese, goat cheese and tomatoes. Grill for 2 more minutes and viola…

It was super tasty and easy! I highly recommend you trying it!
